Cook ahead cook books for Type 2 diabeties?

My father was recently diagnosed with Type 2 diabeties. My parents are in their 80's and a bit confused. I want to plan some meals & possibly freeze in vacuum seal bags, to make life easier on them, and ease my mind that they are eating right.

    That is a wonderful idea. I was recently diagnosed and I use the internet for meal ideas. Also the any Diabetes certified website could give you tips. The goal is to eat carbs that are healthy and lots of fruits and veggies. Nothing processed.

    When I first got diagnosed with type 2, I was sent on a nutrition for diabetics course. The main points were

    1. Stick to low glycemic index foods (google glycemic index), lower glycemic index of carbs by combining with protein or fat.
    2. Limit carbs to 45 g per sitting or meal to avoid intraday spikes in blood glucose levels

    Also on the diabetes and insulin resistance groups on the forums here there have been postings recently on studies that weight loss (especially reducing fat in pancreas and liver) can reverse diabetes.

    If I were doing the advance cooking I would make portions of lean stews and braised chicken which include veg, which they could eat with a little bread or a carb they cook themselves. Recipes that come to mind that freeze well are chicken tagine, coq au vin, estouffade. Meatballs freeze well too and are easy to reheat.
