I hit 50 back last August when on holiday with friends. One of whom had lost 5 stone and had started running marathons.
At the time i was ~ 103kg. Lets just say the hitting 50 and the friend was the motivation i needed.

I decided to lose weight using MFP as an aid.
Its been pretty successful - Im 79kg now which is 1 kg below my original target or 80kg.
However I now want to hit my ideal weight.
I still have a couple of kilos of tummy fat to shift. And the BMI sliding scale is pretty big - but im nowhere near the midpoint.

Ive started to eat more to slow down the weight loss but im wondering how to approach losing the next 4 kg. The BMI charts suggest ~75kg for a 5'11 50 year old male.

That happens quite often, you hit your target weight but find out that is not really the target. Or you don't look like you want to, so the target must be something else.
I don't think there are any answers in the BMI charts, especially if you workout, you'll probably find more answers in fat %. Check out what you MAY want to look like (google male fat % chart), and what you look like now. Better, get your fat % tested so you know where you stand.
With that data you can guesstimate what the next target weight may be.
