When I log an exercise, it does not show up until I go back and log it again. Then it shows up twice and I have to delete one. Anyone else have this issue ?

I log my swims on MFP--no problem as you described. MapMyWalk logs my walks. I formerly let MFP read from Samsung Health, but MFP kept reading the walks and bike rides from Samsung Health and writing them ad nauseum. MapMyRide does my bike rides as well as canoe/kayak races. I only use Samsung Health now to check my heart rate, oxygen saturation and "stress level."

Occasionally MapMyWalk would duplicate a walk that it recorded and wrote, but I never had to delete one--MMW eventually got rid of the dupes. MFP would only read one of thoses.

I don't use a swim specific app/hardware, and have never had a problem with MFP duping one that I logged. I have seen a few things (food entries) not get recorded and then later show up with my re-entry. That could be a function of a slow MFP server. I don't know if Premium gets a more responsive app, but I don't mind the ads on my Android phone, so I'm still on the free plan.
