Protein Intake and Strength Training

I am doing strength training 3 days a week, along with some HIIT or cardio. I know that I need to take in my protein and make sure I'm eating enough calories and what not, but some days I'm just not hungry. Even after I do my workout, I'm not that hungry. I find that I eat half my meal and then I'm done.
How important is it to make sure to do this? Is this just because you need energy because you are burning more or is it genuinely because when you strength train you NEED protein for your muscles? Does it help make your muscles more defined?
I'm really just trying to find out the impact this might be having on me as I don't want to backtrack all my progress just because I'm not eating enough. I do occasionally have a protein shake after my workouts but not every time.
