Making English (hot house) cucumber last a week

I like thinly cut English cucumber (in US groceries this is the cucumber that is about a foot long and is individually wrapped) on Greek yogurt for breakfast with a bit of dill and vinegar. One cucumber lasts me about 4 breakfasts which I space out through the week. If you leave the partial cucumber in its plastic wrapper it tends to mold before the week is out. Storing it in a perforated bread bag prevents this problem. You can get the micro-perforated bags at many bakery counters.

    I know what you mean, my solution is to remove the shrink wrap and then wrap a paper napkin around it. The napkin absorbs the extra moisture that causes it to deteriorate. You can then wrap it in plastic or bag it. I loosely wrap it in Saran wrap.

    I like to just slice them up and eat it, very good stuff! :)

    never tried it in strained yogurt tho, sounds like your quick pickling it with the vinegar and dill sounds pretty good.
