Anyone have good recipes for making chicken fajitas in a crockpot?!

    Not really, the chicken gets way dry. Crock pot chicken works much better for enchiladas where you can add moisture back via sauce.

    Fajita fillings are really just stir fries. If you slice the meat and veg beforehand (and dry brine the chicken with some salt or prepared seasoning mix of your choice), then you should be able to saute everything together in 10 minutes or so when ready to eat. No need for a crock pot.

    HIIII!! I do crockpot tacos but I am sure it would be good as fajitas too!

    I put about 1.5 lbs of chicken, 3 bell peppers and 2 onions sliced, whatever fajita seasonings you would like in the crockpot with black beans, frozen corn and a couple jalapeno peppers (whatever spice you want). I set them up to cook for 6 hours-ish.

    There is about 15 minutes of work after the meal is cooked to get it ready to eat. Preheat the oven to 350. I use a slotted spoon and put all of the food in the crockpot out on to a cookie sheet and toss them in the oven for about 10 minutes. While they're crisping up I heat up my taco shells on the stove top and serve with fresh salsa, hot sauce, cheese, lettuce, guac, whatever you want :)

    Its my FAVORITE!
