Salsa chicken
1 chicken breast - 150g
Salsa dip - 40g
Cheddar cheese, grated - 25g
Fajita/taco powder mix - 1tsp
Fry light - 1 or 2 pumps
Soured cream - 15 ml - optional
Equals 336 cals.
Preheat oven at 190 degrees. Coat the chicken on both sides in the powder mix, place in the lightly greased ovenproof dish, and place the salsa on top of the chicken. Baked for 25 - 35 mins until chicken is tender and juices run clear. Sprinkle evenly with the cheese, and continue cooking for 3-5mins, until the cheese has melted. Top with sour cream if using and serve and enjoy.
I had mine served with a sweet potato jacket - 100g, Savoy cabbage - 34g and leeks - 50g
Totalling 499 served with side dishes.
