I am trying to eat 5-250 calories at 3 hour intervals. I've been successful for the past week but would love different recipe ideas on how to mix it up a little because I will easily get tired of eating the same thing. My 250 calories should have protein as a base and any kind of nuts are out due to my allergies.

It's much easier to stick to your calorie goal (1250) if you eat different sized meals throughout the day.1

Unless you have some sort of ADD/OCD/ASD where eating the same thing every meal makes your life easier. Mix it up.
Clearly you don't, because you're already getting bored/tired. Figure out what works best for you... and then you do you.1
