Ribs... How do you weigh them?

It says 4oz of loin back ribs are 250 calories. But is that with or without the bone? I smoke meats several times a year, so I'm familiar with rib racks. I mention this cause one side is longer than the other. This would alter "4oz" not only if the bone was included, but also depending on which end of the rack you're eating. Thanks helping me understand this. Fahn

Use the USDA tables - they'll specify the measurement method (bone in or out, fat eaten or discarded, rib type, etc.).
The easiest way to measure is to weigh the cooked ribs prior to eating and then to weigh bones afterwards. The difference is the amount of meat eaten. Look up that value on the appropriate USDA table. Don't forget to account for sauce or sweet rubs.5 -
I've wondered the same thing. And meat will weigh differently before and after you cook it.0

Don’t have a definite answer to your question, but couldn’t you weigh them before eating and after eating weigh the bones and subtract to find out how much meat you ate?1

the calories for 4 oz is the edible portion...ie not the bone. you'd have to weigh it out and then weigh again afterwards with the difference being what you ate.
i love ribs, but they are a rarity for me so I never bothered with that kind of accuracy...it was generally more of, "yeah...I'm going to eat all these ribs" kinda thing...2
