Quick Gourmet Soup--Picture included!

This was lunch! Creamy Veggie and Sweet Potato Soup

Low in calories, but very high in fiber, vitamins and minerals. Very satisfying!

Place in steamer basket and steam until tender:
Peeled, sliced Carrots
Sliced Zucchini
Sliced Sweet Potato (leave the peel on)
Optional: some slices of red apple (such as fuji), leave peel on

Place into frypan:
Irish Butter (European butter...it's rich and delicious, as well as very healthy)
1 can rinsed white beans
herbs of choice (bay leaf, oregano, garlic powder, rosemary is what I used today)
Salt (add enough to make it nicely salty, and use Unrefined salt!!)
**heat and simmer briefly until flavors blend

Place into Blender Jar:
Chicken stock or broth
More water if needed to make thinner soup
steamed Veggies
A little bit of Salt
**Blend until smooth and creamy. You will see flecks of zucchini peel.

Serve creamy soup in heated bowls, and top with the butter/beans. Sprinkle additional Salt or Seasoned Salt or Pepper if desired. Garnish with sprig of herbs.
