That's an interesting probleem to have.
I usually have opposite issue. I find it often hard to reach my protein goal, while it's way easty for my to go way over with carbs.
In any case, MFP default percentages can be too low on protein, if your calorie goal is quite low.

Since you are gaining you probably want less filling carbs.. white bread, bagels, pasta, noodles, rice, dried fruit, juices, syrups, cereal, candy. What are your macro goals right now?

What are your fitness goals? I manually set mine to achieve what I'm going for ( hardly ever get it right) but I usually go over carbs. Protein is hardest for me.

On eating carbs as part of your plan, I say choose eating complex carbs (that have more fiber within those carb foods) along with some simple carbs (ideally fruit).

Complex carbs include whole grain breads, old fashioned oats, brown rice, whole grain pasta (the brown pastas), beans, quinoa, yams, etc These foods have fiber as well as carbs.

Simple carb choices are usually fruits. Or natural sweetners/refined sugars (honey, maple syrup, agave syrup, cane sugar, corn syrup). Be careful not to indulge in too much refined types of sugars.

Fruit is best for a daily simple carb choices, but it is usually best to eat in a sensible amount, especially for prediabetics and diabetics.

Every "body" is different, the trick is to find what works for you, so you stay well nourished and healthy. And it indeed helps if you have a varied dietary intake in meeting this goal.
