How much should I be eating?

I'm not looking to lose much more weight, I'm wanting to tone now and get rid of the fat surrounding my stomach and hips. I swim, run and go to gym classes and I also started the 30 day shred a week ago. The issue I have is if I am eating enough? I'm not hungry or anything but I read on a few topics that I can't lose weight and gain muscle at the same time, so what should I be typing into MFP? Should I be maintaining weight now and eating more? I'm afraid of putting the weight back on as I find on days where I do go over I feel very full and bloated.
