Struggling to eat enough healthy calories

I am supposed to be eating 2100 cal/day for a one pound weight loss each week. However, I work out fairly hard and most days I am supposed to eat between 2500-3000 calories. I can't get to this calorie count without eating unhealthy or eating beyond being full. Any suggestion on high calorie healthy food? I don't want to stop losing by cutting to many calories or lose muscle mass. Any help would be much appreciated.

Exercise cals are highly inflated on here in my opinion, shoot for 50% or less and you'll be fine. Unless you're using a HRM, that may be more accurate. You could also consider going by TDEE so you don't have to worry about eating back calories.
ETA: Peanut butter, avocado, and most dairy are calorie dense. A glass of chocolate milk and a heaping spoon full of peanut butter is around 500 calories.
