Brown rice ideas?

Hi there! I just made a huge batch of brown rice to distribute throughout the week for lunch. What are some ideas you have to spice it up? I'm making some chicken too. :D

    Darn! I was hoping someone had replied...I have a box of brown rice and have no idea what to cook with it...I recently gave up my white rice and was looking for some good recipes...

    Black beans and some chili seasonings! Toss in some salsa, chopped tomato, onion, chicken and green pepper. Top with some cheese or sour cream and chopped lettuce!

    Add avocado...I use it to replace the butter I used to put on it.

    I do what I call a Deconstructed Fajita as a way to use up day-old chicken. In a skillet/frying pan I heat up some sliced green and red peppers and some sliced onions (my grocery store sells precut packages of this mix!!). I also slice some of the leftover chicken breast. I put the chicken in with the veggies after they've been cooking for a while. I place it over a bed of brown rice. And I top it all with a good dose of salsa and some sour cream. Maybe some cheese.

    Ha ha! Awesome! I'm glad someone else thinks it sounds yummy. I don't cook. I'm terrible. But I sort of made this up on the fly one day, and I love it! It's ridiculously easy.


    Oh, I forgot to say that you need olive oil or margarine or butter or whatever in the frying pan with the veggies. Not too much, just enough to make it not all stick and burn.

    There, now it's ridiculously easy.

    Deconstructed Fajitas are amazing. Just reading that is making me hungry. We have a lunchspot near here that does a homemade one with black beans and salsa too.

    OP, anything where you would normally have rice...?

    Could try making a paella style dish with the chicken and whatever else you are fancying. My favourite lunch right now uses brown rice too; I have it with some flash fried strips of steak cooked with soy sauce, oyster sauce, ginger, corriander and generous amount of garlic. Its yummy, high protein and if you are just reheating pre-cooked rice takes no more than a minute to cook.
  • Veggies and rice and cheese.....I just top the brown rice with steamed veggies, any variety, and cheese, any variety, and voila, lunch!

    Stuffed peppers! Some rice, onions, chicken ( or tofu), spices to taste, cook together, then stuff into peppers and bake at 350 degrees for an hour. Freeze and reheat well use 1.5 to 2 cups of rice for 4-6 peppers, depending on other add ins.

    Eggs and rice together are delicious. If you like runny yolk mix the egg through the rice and eat. Yummmmmm!

    hmm avocado instead of butter... how much avocado would you say to replace the butter with?
  • Cook it in chicken broth and add veggies and Mrs Dash Garlic and Herb.
    Eat with Baked fish or a salmon burger

    I serve pretty much everything over brown rice:

    Chilli, BBQ chicken/salsa chicken (I just cook some boneless, skinless breasts in a crockpot with bbq sauce or salsa), chickpeas & salsa over brown rice.

    Sometimes, I cook the brown rice with either low sodium veg broth or tomato soup.

    If we're talking about boxed brown rice, I've found you can use it in the same recipes as white rice. It might take a little longer to cook and have a more pronounced flavor, but those will be the only differences.

    Not sure if this also applies to general, bagged brown rice.

    At the moment, my most frequent recipe is to mix the rice with frozen veggies, cook it in broth and serve it with eggs or lean meat. Another favorite is to mix the rice with frozen veggies and diced sausage and cook in water with a pinch of salt. For the veggies, I like broccoli, cauliflower and peppers (and mixes that are based on them).

    I like to throw some broccoli, carrots, peppers, onions, and chicken in with some spices and just a little bit of reduced sodium soy sauce for a take on stir fry. It also tastes really good with some beans, onions, and corn. I never thought I would like brown rice, but I have replaced white rice with it and I don't miss it at all.

    I love mine simple made with chicken broth. Sometimes I'll add in sauteed onions, garlic, peppers, and herbs.

    I love brown rice and eat it 3-4 times a week. My favorite way is to cook up the rice and then in a separate pan steam cook lots of mushrooms, diced bell peppers, onion (green or white/red), and carrots. Add that to the rice and add a couple splashes of soy sauce.
  • I like adding some dark soy sauce, raw onion, peppers and other veg etc and then slice up the chicken

    Another thing is I make up some sauce like thai curry or sweet and sour and add that to chicken and rice

    I'm sad to say that I've developed a real taste for brown rice and actually enjoy it plain, something I can't say about white rice. But I rarely just eat it that way :-)

    If you have a sweet tooth then drizzle a little teriyaki sauce on the brown rice. Actually works for both sweet and salty, although definitely not the best bet if you are really watching your sodium. Throw in steamed or stir-fried veggies and/or chicken for a complete meal.

    I usually cook vegetables with the rice. I'll saute garlic and onions in a bit of olive oil. Then I'll add some diced vegetables (carrots, celery, mushrooms, and bell pepper usually) and then add the rice into the mix 5 minutes later or so. Then I cover the rice with 2 fingers (like when measuring alcohol) of water. Then I salt and season to taste. I'll taste the cooking liquid to see if the flavor is right, then I let the rice cook. If the rice isn't cooked all the way when all of the water has cooked off, I will add just a little bit more to the pan and let it cook until it is finished. Last night I did this, but I added some bacon in with the garlic and onion to give the rice a bacon flavor.
