Protein Powder Cookies

I work on a military installation, and every now and again we have bake sales to support the soldiers. Ever since I brought these cookies some five years ago, i get asked to make them...and they sell out fast!
I thought you all might be interested in the recipe!
2T coconut oil
1/2c protein powder (I usually use a vanilla flavored one, but you can use whatever floats your boat)
1/4c wholte wheat flour
1/2 tsp baking soda
1/4c oats
1/4c milk of choice (I like almond milk right now...but have done coconut and soy in the past)
1/4c finely chopped nuts (almonds and pecans are great in this recipe)
1/4c SF dark chocolate chips
Preheat oven to 350F.
Mix everything together.
Divide dough into 12 equal pieces.
Place dough on baking sheet.
Bake for 10-12 minutes.
These are better slightly underbaked, so they stay soft, rather than "done"...they tend to get a bit rubbery if they are 100% set.
These are roughly 75Kcal per cookie, depending on the type of nuts, protein powder and milk you use, and about 3-4g protein each.
They keep nicely in a lidded container, though I tend to wrap them individually in Freezer Press N Seal wrap and freeze them. 1) It keeps me from eating them in one go...and take about 5 minutes to thaw at room temp, or 20 sec in the microwave. And 2) They stay fresher longer that way, especially if you are the only one eating them.
