Meal prep eggs?

Strange question, but I love scrambled eggs, I get quite short breaks at work (15 mins), we have a microwave so I normally make my eggs in there but prefer to make them in a saucepan, has anyone ever prepped them the day before and microwaved them? Is that a OK thing to do? Thanks

I do it all the time. I usually undercook them just a smidge so they don't dry out in the microwave though. Or I'll add a little cottage cheese to them when I'm cooking and that helps keep them moist too.2

Yep. I cook egg white "omelets" on Sunday and reheat them all week long for my breakfasts.0

I make egg casseroles for the entire week. Out of a 9x13 pan, I'll generally get 6 servings so I don't have to think about breakfast at all until that next weekend.
I know it's not scrambled eggs but I thought maybe I'd throw a different idea out there to see if it may work for you.
Also, I have an microwavable omelet maker that I have made scrambled egg. No need to prep or anything.0 -

I have, but I did not care for the texture. I just keep them in the refrigerator.0 -

I make an egg and veggie scramble a couple times a week. Sometimes with whole eggs and sometimes 1 whole egg and 2-3 egg whites. Usually with peppers, mushrooms, spinach, zucchini - whatever I have on hand. I make enough for several days then reheat that in a skillet along with a tortilla. Breakfast taco! This definitely keeps for multiple days, but freezing it not such a good idea (IMO).
I've also reheated with microwave, but mine broke and I haven't replaced it yet.0 -
I meal prep breakfasts with scrambled eggs on Sunday nights and eat them through Friday morning without issue. As someone else mentioned I do leave the eggs slightly underdone so they don't get rubbery in the microwave.0
