Calories for beef from butcher?

Some relatives recently gave us a freezer full of organic, grass fed ground beef and I have no idea how to count the calories for this. It was part of a cow they purchased, so it's just in the wrapping from the butcher and doesn't say the fat percentage at all. It seems pretty lean, though, and doesn't produce a lot a grease when you cook it. Any ideas?

    Figure it as 83 or 85 - because butchers process beef differently from a lot of larger factories, the grease doesn't come out the same and isn't as reliable a way to guess the fat content.

    I would ask the butcher about the fat content. Our butcher has some 85/15, but also has 93/7. If they grind the meat on site, they will know the fat content.

    is there any writing on the wrapping referring to the cut (chuck, ribs, sirloin, ribeye, etc)? If so I would log it based on that as generally the same cuts of meat are going to have about the same amount of fat regardless of how the animal was raised. Ribeye, chuck, delmonicos are all going to be fattier than sirloin or top round.

    If not labeled, maybe see if you can find images of different cuts online and compare structure and marbelling to find the closest match?
