Bloating/weight gain intermittent fasting

So typically i break my fast at 1130am with a bit of chicken and lettuce. At around 5pm i eat my postworkout meal aka my big meal. After that, at like 710pm i eat a small dinner and fast at 730 again. So around 3pm to 5pm i workout and after my workout im all skinny about 157(lowest) but after my postworkout and dinner meals, im always arojnd 165 or 166 or 167 pounds. Thats been going on for quite a while now. And i make sure these are all at least somewhat of a deficit. My postworkout meal is around 500calories and dinner around 500 and some fruit for 100 calories. And in the morning im always either like 160-162. I do remember seeing a 158 but that only lasted on day. Is it just undigested food and water? Because if it is i wanted to know a fast way to digest food more. Thanks!!

Um... I'm not even sure where to start here. I guess maybe a good first step would be to put the scale away. You seem far to reliant/invested in the number on it and far too naive about what that number represents/indicates.
Minimally, I agree with lizzardqueen - weigh yourself once a day, at most. At the same time of day. Focus on long term trends in weight, not daily fluctuations. Fluctuations are normal and weight loss isn't linear.7 -

After your workout, you are dehydrated, and so weigh less. After eating, you have that food in your system, as well as the water your are hopefully drinking after your workout.
Do NOT take any advice to get rid of the post meal weight faster. It will be harmful for your health.4 -

I will weigh a lot more after all day of being active and and eating and drinking.
Echoing weigh once a day, perhaps morning, same time. same conditions.4 -
160lbs is fairly light for most males. How tall are you? And how old?1

Stop looking at short term results and solutions, you're weighing less after your workout because you're lost water through sweating.
Why on earth do you want to digest your food faster? that doesn't make you lose fat.
You are trying to lose fat not water weight and undigested food.
What you need to lose fat:- Moderate Calorie Deficit
- Sustainable way of eating
- Consistency
- Patience

You don't have enough weight to sustain a 1.5lb loss per week. You are in the healthy range for BMI, set yourself to 0.5lb per week and log accurately, that is all there is to it.

With your stats, why are you even trying to lose weight? You may want to consider a recomp. I am 3" shorter than you and only weigh 5lbs less2

For that matter, what blasted kitten reasoning has you convinced that at 18 and well within normal bmi your best strategy is to lose weight in the first place?
And what insane kitten reasoning has you convinced that you have to eat in a special window and that your convoluted multi-times-a-day-weighing has meaning?
Last, but not least, the concept of getting rid of water weight faster really does call your state of mind to question.
