Can someone explain to me why people post 30 minutes of exercise but only burn one calorie?

A lot of folks, myself included, are following Helloitsdan's In Place Of A Roadmap suggested weight loss "plan." You eat anywhere from 10-20% of your TDEE and don't log your exercise calories, as you're eating enough for your total exercise/activity level.

During the week I try to keep my calories constant, but I like to keep track of my workouts. So, I enter 1 calorie burned for exercises so MFP won't add more calories (the site won't let me enter zero).

Hehe, pretty sure you meant you eat anywhere from 80-90% of your TDEE, or TDEE minus 10 or 20%.
Sure you knew that, just didn't want to confuse anyone that might have come across this that wasn't familiar with the method.

As they've mentioned, it's for people who use the TDEE method and have changed their MFP goals customized to that method vs. MFP method of eating back exercise calories.

I found out my TDEE, which includes any exercise calories I might burn as it takes into consideration my activity level, and then I cut about 20% from that to give me a set goal. I personally prefer this way as opposed to the MFP way of "eating back exercise calories" because I eat a set number every day instead of trying to hit a moving target. However, I like to log my exercise because...well, I'm vain and like to brag...and I also want my MFP friends to know I'm working hard and progressing with my lifts. The only way to log my exercise and NOT log a calorie burn is to log the burn as "1" (MFP doesn't allow you to log "0").

^^Yup! At TDEE you eat the same amount and DON't eat back exercise calories, so it will show out workout, without the calories burned so we don't overeat.

Also, what is 20% of my TDEE...like, 500-600 calories? Yeah, NO WAY would I advocate that.
