Egg white meringue questions

I have a couple of questions on how to make meringue for recipes like “cloud bread/ tortillas, cloud desserts”...etc

What main ingredients do I need? I heard it’s just whipped egg whites and cream of tartar and a splash of lemon juice? I know carton egg whites aren’t optimal, but can I use them? I don’t have a whisk or whisk handheld blender, but have a ninja blender, will that work? Any other tips or suggestions would be great! Thanks!
