No Bake Frozen Grasshopper Bars - Avocado and Coconut
I passed a roadside stand the other day that was selling avocados 20/$5. So today I found myself searching for avocado recipes since I bought two bags. I found this one at:

and tweaked it a little. My hubby and I have been trying to eat healthier for about a month now and together we’ve lost 30 pounds. Our weakness is finding healthy alternatives to foods we really like. While I am okay with sacrificing a little flavor, hubby is not. These passed his taste test. You can see the original recipe at the link above, and here is how I tweaked it. Next time for the mint layer, I will combine all of the ingredients except the coconut, then add it a bit at I time because I was terrified my Vitamix was going to quit (I made a double batch) The mixture is pretty thick. You make the mint layer, spread it in a lightly greased glass dish or pan and put it in the freezer while you make the chocolate layer. For the chocolate layer, melt the coconut oil and Truvia, then remove from heat and add remaining ingredients. I actually added another teaspoon of mint extract to the chocolate. Then return to freezer until frozen. I divided a 5x9 glass dish into 24 pieces and calculated about 157 calories per slice. Hope you enjoy it as much as I did!
Mint Layer
2 Haas avocados
1 tablespoon liquid Truvia
3/4 cup coconut oil, melted
2 cups shredded unsweetened coconut
1/2 tsp peppermint extract
1/2 tsp mint extract
1/4 tsp salt
3/4 tsp vanilla
Chocolate Layer
1/2 cup coconut oil
1 Tablespoon liquid Truvia
1/2 cup cocoa powder (I used Hershey’s Special Dark 100% cacao)
1/2 tsp vanilla extract
1/8 tsp of salt

The coconut gives it a really nice texture, so you feel like you’re eating Girl Scout thin mints! I was really happy with the taste. Hope you enjoy!

Whats a serving size? How many tiny squares does this make (servings)?
Like a 1x2 square. Used a 5x9 Pan for 24 slices. Sorry, I don’t have a food scale to be more accurate for you. I was wondering if you knew better ingredients than using so much coconut oil that the recipe called for - you know more about how it would affect the texture, which is really nice. I was thinking of substituting it with Greek yogurt and running it through the ice cream maker. You just seem to know so much about alternative ingredients! Quite impressive. Thanks!0
