These are so delicious that I wanted to share! You could make these ahead and reheat in a microwave. I think they would be delicious without the turkey if you are vegan. Before adding marinara, they came out to 91 calories each. I topped with 1/8 cup of Newman’s Own Marinara. Enjoy!

Preheat oven to 400 degrees. Slice three zucchini lengthwise and carve out center with a spoon and place “meat” of zucchini aside in a bowl. Place zucchini shells cut size down in a lightly greased (I actually forgot to spray the dish and they came up fine with a fork.) glass dish and place in oven while you prepare the filling. In a bit of water, sauté 1/2 yellow onion, 3 cloves garlic and 1/2 red bell pepper, then toss in 1/2 lb ground turkey, 1/4 cup mushrooms, one chopped tomato, zucchini “meat” from bowl and two cups of fresh spinach leaves, add salt and pepper to taste. Cook for about ten minutes, stirring occasionally. Strain. Mix contents well so items are evenly distributed in”boats”. Take zucchini out of oven, flip over and spoon mixture into boats. Sprinkle with 1 tablespoon of vegan Parmesan and top with two tablespoons of vegan mozzarella shreds. I was going to top with Ezekiel bread crumbs, but they don’t need it. Bake for 15 minutes. 91 calories each. Really good!

*I saved the strained juice to make miso soup with tofu tomorrow.

Where's the rest of your steak though?

That's a delicious looking meal. That steak is perfect. I haven't cooked a zucchini boat in quite a while I used to make them with Italian sausage and Bolognese. But I have a couple vegan style recipes using lentils in my recipe box, this is inspiring me to pull them out and give a whirl.

That was my portion! Lol. I actually ate the rest in cold strips over spinach and strawberries. Yum!

Yum! I used to eat zucchini boast all the time, mostly stuffed with leftover chili. I think I need to work this into my rotation soon.

I love zucchini boats. You can also make them with taco seasoned ground turkey (w/onion, garlic, black beans, salsa & queso fresco). Another way to use your Italian ingredients is to stuff and roast in a portobello mushroom.

I do these when my family is eating tacos. I can't see wasting my calories on taco shells. Just not worth it. This is so much better and keeps me filled.

I just tossed in raw baby spinach. It was my favorite part!

That sounds really good! Portobello mushrooms are the best! I scrape out the gills and crack a whole egg inside and then bake.

The taco idea is one I’ll have to try!
