Peppermint Mocha Muffins

I found out recently that I need to cut my sugar consumption for a health problem, and I've also discovered that too much Splenda causes me some severe issues. And, of course, all the sugar free cake mixes have Splenda, which means my lazy way of making muffins for breakfast was out. After doing some digging around, I found many great muffin recipes on https://tastesoflizzyt.com. The Peppermint Mocha Muffins are to die for, and I've found a way of making them which yields 15 muffins at a whopping 77 calories each, so I thought I'd share.

https://tastesoflizzyt.com/peppermint-mocha-coffee-muffins/ is the original recipe, but I made these substitutions:
  • remove 2 tbsp of flour from the 1.5 cups flour and replace with 2 tbsp cornstarch
  • .5 cup generic Truvia Baking Blend for .5 cup sugar
  • 5.5 tbsp Truvia Brown Sugar Blend for the 1/3 cup brown sugar
  • 1 cup sugar free French vanilla creamer for the peppermint mocha creamer
  • .5 cup pumpkin for the .5 cup canola oil
  • 2 tsp peppermint extract instead of .5 teaspoon to make up for substituting the peppermint mocha creamer with French vanilla
  • The batter seemed too thick, so I added .5 cup water.
  • I baked it at 375 for 20 minutes, because I'm lazy and didn't want to mess with her baking instructions, lol.
  • I left out the chocolate chips and crushed candy canes.

In all, with my substitutions, I took 176 calories out of each muffin. And, omigosh, they are to die for!

    FYI, they're 17 carbs each, with 1 gram of fiber and 3 grams of sugar. My daughter's diabetic friend always asks me for that info before she eats here.
