Healthy Freezer Meals

Hi all, I have shared care of my kids with my ex, and I'm looking for some amazing slow cooker, or easy super healthy freezer meals that I can make to eat on the week I don't have the kids. I often get home from work at 7/8pm, so it needs to be something I can access quickly so I don't reach for the junk! I love curries etc (without frozen potatoes - blech), or anything really. I'm trying to cut back on carbs, and I'm happy to throw a pack of frozen vegies on the side for those recipes that have vegies that don't freeze very well.

    I mostly freeze seasoned cooked poultry and pull it out a day before I need it into the fridge. Microwaving from fridge cold give far better results than from frozen. Sides are quick enough; I am eliminating prep more than anything else. If you don't want off shelf sauce, make your own and keep it in the fridge. It will last several days. You can use a lot of recipes and just make the sauce and put everything together. It isn't quite the same but for most recipes it is pretty good.

    I cook some ground chicken with some onions, minced garlic and jalapeños. Drain. Add back to big pot, then add 2 cans of fire roasted tomatoes, a box of chicken broth, chili powder, cumin, paprika, oregano, ranch dressing seasoning packet, salt & pepper. I let that simmer for like 20-30 mins then I add in a can of corn (with the liquid) and black beans (drained and washed if your soup is thick, or just pour the beans and the bean juice in if your soup is watery... the bean gunk will thicken it!) you can also add pinto or kidney beans.. but I just use black (2 cans) you can also add some water to get the right consistency to your soup!

    I’ll serve with sour cream, cheese and avocado :)

    Soups are always a good way to go. My wife makes carrot ginger soup that is AMAZING! We triple the recipe and freeze it to eat as just a soup of we also put it over baked chicken and rice. Delicious and healthy.

    Braised chicken dishes freeze well. Dak dori tang, coq au vin, chicken cacciatore. If you don't want the potato in the dak dori tang, replace with squash. If you avoiding carbs serve with spiralized courgette or cauliflower rice.

    I make a huge pot of soup weekly, alternating between chicken and beef. I use better than bullion stock and add minced garlic, yellow squash, zucchini, riced cauliflower, carrots, broccoli, yellow onions, peas, a bag of cole slaw mix from the produce section and then, of course, whichever meat I’m using that week. I put it into single serving Tupperware and toss it in the freezer.

    Using cole slaw mix instead of cutting up cabbage is genius! Thanks for the tip!
