There are a million (probably more) foods that aren't eggs or meat (other than chicken)....not sure that's picky, or overly difficult...

What DO they like to eat? I could throw recipes at you all day, but without knowing more about their preferences it's pretty difficult.

Do they like spicy? Here's my favorite chickpea curry: https://allrecipes.com/recipe/34689/chickpea-curry/?internalSource=hub%20recipe&referringContentType=search%20results

Do they like soup? I love roasted tomato, split pea, curried apple pumpkin, and I just made this today and it was fabulous: makingthymeforhealth.com/lemony-lentil-greens-soup/

Do they like TexMex? My whole family loves mushroom fajitas with bell peppers, onions, and homemade guacamole.

You can make a dynamite whole wheat pizza with vegetable toppings. You can make a variety of amazing salads. Mostly it depends upon what everyone likes and also what you consider healthy, which can mean a variety of things to different people.

You will have to make an enormous effort. It's not going to be easy.

Figure out what constitutes a healthy diet.
Eat those things in any combination and meal schedule you like.
Then pick one of two options:
    1) Avoid eggs and meat that is not chicken.
    2) Get used to eating eggs and meat that is not chicken.

The person eats fruits, vegetables, grains, bread, cereal, cheese, yogurt spices? Or they just eat plain chicken and nothing else?
Healthy meals and snacks are those that help a person to meet their body's nutritional needs. That can be a lot of foods. If the only restriction is no eggs and only chicken for meat it is not so hard. If the person will only eat chicken and no other foods then they are not going to have balanced nutrtion.

There are hundreds of chicken recipes on any non-vegetarian recipe sites or blog. I find a lot of recipes through pinterest.

I don't like eggs much on their own so skip eating them most of the time. I am fine with them as an ingredient in a meatloaf or cake. There are lots of recipes that don't contain eggs in any form. https://www.allrecipes.com/recipes/740/healthy-recipes/egg-free/

Typically I eat things like this:
Breakfast- low prep foods like Greek yogurt, granola bars, cereal with milk, sandwich, dinner leftovers, fruit, cottage cheese
Lunch- things like sandwich, salad, or dinner leftovers
Dinner- something different every night of the month. Soup of some kind once a week usually.
Snacks- things like fruit, chips, popcorn, pretzels, chocolate, cookies, granola bar, carrots, celery, broccoli, tomatoes, cucumber, trail mix, pickles, cottage cheese
