Just for dinner or do you need breakfast too?
I make all meals for dinner and then eat the leftovers for lunch. I do smoothies for breakfast and usually a couple snacks during the day.
Crock pot is a good friend when it comes to meal prep. You can do soups to last the week and slow cooked meals to split between nights. If you google healthy crock pot recipes you'll find more than you would ever imagine.
I use emeals also to have all my meals lined up for the week, I just add to shopping cart, pick up at walmart and cook, then I know my dinners are covered. Usually making batches of soups, casseroles on the weekends for the week too.1 -
