Sweet Potato Chips

Regular and purple sweet potato's, thin sliced on the food processor blade.
Toss in a splash of oil, salt and paprika.
Spread on parchment paper and place in the middle of the oven at 225F to 250F for 2 hours, turning after 1 hour.
When done, remove and leave to rest for 10 to 15 minutes.
The photo made them look a little over, but they were not. It may just be the purple. I could not believe how crispy they came out.
