What to eat...

Hi all. Just joined. While I’m not a vegetarian or vegan, I love fruits & veggies & am trying to find a way to stick to mainly that for a healthier diet. If I need protein or crave meat I eat it, but my problem is easy, quick & delicious vegetarian recipes. I tried a tofu stir fry once, loved it, but haven’t figured out how to cook tofu to save my life. So any recipes, tips, encouragement etc would be greatly appreciated.

If I were to focus more on plant foods, which I feel is a good idea, not primarily for physical health, but for better conscience, I think I would have made grains and pulses my mainstay, but not relied heavily on recipes, and continued eating plenty of fresh fruit and raw vegetables.1

There are a wide array of vegetarian and vegan foods outside the narrow scope of "fruits and veggies" (at least as most people define those terms), and if you're limiting meat and other animal products, for health and satiety it's a good idea to open yourself up to the full range of plant-based foods (grains, legumes/pulses, seeds, nuts, mushrooms and other fungi, etc.).0
