Spiralized Sweet Potato Recipes Needed!

A 5# bag of sweet potatoes were on sale this week, so I had to get them. I have not tried them in the spiralizer yet, but want to. The question, though, is what to do with spiralized sweet potatoes? Help me out! Thanks!

Not exactly healthy, but this is one to thing to do with any spiralized or grated veg.

Maybe an Asian noodle dish such as pad thai, chow mein, cold sesame noodles (microwave spiralized sweet potatoes first), or ramen. The only Italian pasta sauce that comes to mind as complimenting sweet potato is sage butter which is not exactly healthy. Or google "sweet potato gnocchi" for other Italian sauces that go well with sweet potato.
If you go for doing the labour intensive gnocchi, my suggestion would be to prick the sweet potatoes with a fork and zap until tender in the microwave instead of boiling unpeeled or baking, as specified by a lot of recipes. Pricking the skin is essential to let steam escape as otherwise they can explode in the microwave.

I wouldn't have thought sweet potato would be easy to spirilize? its got such a hard texture.
I would be more inclined to bake it or steam/boil and then mash it or use it cut up in chunks in soups/casseroles/curries.2 -
A friend of mine bought some sweet potato already spiraled from the produce section at her local grocery store. She just sauteed it in some oil. I thought someone might have another idea for me.0

Interesting... I have two hand-held spiralizers, but have done so little with them; I didn't think of sweet potatoes at all.
