Food question

Hi! I’m looking to make a batch of egg whites, spinach, mushrooms, Greek yogurt and Parmesan cheese and cook as needed. I don’t care for the muffin tin version. Should that keep ok in the fridge ? Mixed like that??

    You are thinking to have a batch mixed up raw and cook up as needed?

    I’d follow the expiry date on the egg whites.

    I would make it as needed, rather than mixing the whole lot together.

    You could sauté the veggies and keep hose separate and then mix and bake with the eggs, cheese, and yogurt as needed.

    According to a google search egg whites last about 4 days. I have no idea how much the acidity of the greek yogurt will extend that time.
