Everyday Pancake Recipe
EVERYDAY PANCAKE
(APPLE SWEET POTATO VERSION)
1/4 c. Old fashioned Oatmeal
1 scoop of protein powder
1 egg or flax egg or 2 egg whites
2 tbs. almond milk (or cows milk or water)
1/4 of chopped apple
2 heaping tbs. of baked sweet potato
Pinch of salt
1 1/2 tsp. baking soda
1 1/2 tsp. vanilla extract
1 1/2 tsp. cinnamon ( I put more because I love cinnamon!)
Process oats and protein, I put mine through magic bullet.
Add the rest of dry ingredients; salt, baking soda & cinnamon. Mix.
Add wet ingredients; egg, milk & vanilla. Mix.
Add sweet potato and blend.
Then stir in apples for yummy apple chunks in pancake, however you can blend in in with sweet potato for smoother looking pancake.
Put coconut oil on pan or griddle on low-med. Cooks practically like reg pancake. I topped it with some peanut butter, the rest of my warm sweet potato, more cinnamon and the lightest drizzle of honey and the rest of my sliced red delicious apple on the side. It's very filling, clean and the pancake is 260 cals!! Full of so many nutrients to start the day!
They are called Everyday Pancakes bc I have them practically every day and never get bored because I switch out the fruit all the time! Blueberries, w/ vanilla Greek yogurt, bananas w/ walnuts, apples w/ pumpkin spice, strawberries w/ shredded coconut and when I get chocolate protein powder things might get crazy! Lol. Anyways, enjoy!
