    Hi, my hands down favourite vegan recipe that I can't see how I'll ever be sick off is a chickpea curry by hurrythefoodup.com. I have a few close joint seconds but this one has to be the best and also sooo easy.

    The sauce with the lime and soy is amazing (for the curry paste I use Pataks Balti Spice paste) I treble the garlic (but I do this with all recipes)
    I also add 250g of chestnut mushrooms and couple handfuls spinach near the end

    My go to recipe is fresh spring rolls. You can put just about anything in them and taste great even without dipping sauce. I prepare the noodles then set everything out in a line, then wait for the wrap to turn flimsy and go down the line of veggies, tofu and wrap it up like a burrito.

    I post this recipe so often people are going to think it's my own blog or I get commission or something, but I don't. I just love it. If you eat mushrooms at all, this is super hearty and delicious and very low cal. Savory Mushroom Stew

    You can use all button mushrooms if you can't find Baby Bella or just want to save a few pennies.

    Moujadra. If onion frying is too much work, buy the ready fried shallots from an Asian grocer.

    We love roasted veggie and quinoa salad.

    Cut up an onion, sweet potato, cauliflower, brussel sprouts, carrots, and beets. Toss them in some olive oil and soy sauce until evenly coated. Bake them on a cookie sheet until tender. While baking, cook quinoa in veggie broth. Combine everything in a bowl.

    I am currently obsessed with kale salad with mango, coconut and cashews.

    I like to toast the coconut along with the cashews for just a couple minutes - it adds a new dimension. Yum!

    I get Hello Fresh about once a month (my daughter uses the dairy sour cream, I use my own vegan one) and they have an awesome recipe - Crispy Chickpea Tacos. I am obsessed and make it a couple times a week now!

    These recipes are easy. I cook them on Sunday and portion them out for my work week, meal-prep, to-go lunches. I usually get 3 lunches out of each recipe batch.

    Cold chickpea salad
    • Prepared quinoa (about 2 cups)
    • 1 can chickpeas (rinsed)
    • Raw baby spinach
    • Chopped dried apricots
    • Almond slivers
    • Chopped red onion
    • 1 chopped yellow or orange bell pepper (I sometimes use zucchini)
    • Any kind of lemon /olive oil vinaigrette salad dressing (I use this one from HEB https://www.wish-bone.com/products/evoo-lemon-herb-dressing/ )

    Cold black bean salad
    • 2 cups cooked rice
    • 1 can black beans (rinsed)
    • 1 chopped tomato
    • 1 small can corn
    • 1 chopped green bell pepper
    • Chopped yellow onion
    • Chopped fresh oregano (I sometimes use fresh basil – or both - whatever you prefer)
    • Salt and pepper
    • Cilantro
    • Italian salad dressing or some type of vinaigrette dressing. Whatever you prefer.

    I use the old El Paso garlic and paprika seasoning... fry it with sliced red onion, red pepper, courgettes, mushrooms ((cashews if you want good fats)) .. serve in lettuce cups / low cal taco shells / wraps ((bit too high cal)) ... maybe with homemade guac ((high cal)) or salsa ((low cal)) xxx
