I made Turkey Chorizo. Not nearly as good as the real thing, but a good trade off for half the cals.

1lb 85% fat ground turkey (You could use the lean, but it's going to be even more dry)

1tblspn-ish each of cilantro, chili powder, cumin, garlic, coriander, chipotle (or any pepper you want to use), black pepper + salt. You can play with these ingredient amounts to taste. The coriander and cumin are the body of the seasoning.

Mix it up by hand with about 2 tblspns of white vinegar and shove it in a cold refrigerator overnight. Either stuff it in casings or make patties out of it.

The result is the chorizo flavor without the pork flavor/texture. The texture is not nearly as good as the real thing, but if you like chorizo and have trouble fitting it into your calories, this wasn't "bad". For those of us who eat turkey products you can probably imagine what the difference is like. ie, turkey bacon vs pork bacon.

1lb = 1,000 calories

    This is a great hack. You could also try adding 25-50% pork to the turkey as a compromise.

    This! I buy two rolls of turkey sausage and 1 roll of pork sausage, and then mix them by smoosh them all together before cooking. It actually still tastes like pork sausage although it’s is much lower in calories.
