What's your favorite salad??

I havent tried the Lean Cuisine Salads yet...not sure if they appeal to me...

Anyway, I love to make taco salads. I find if I use enough (spring mix) lettuce to feed a small colony then I can skimp on the toppings and save myself calories, sodium, fat, etc...

Anyone else use a ton of lettuce or do you actually measure?

My favorite salad is this one -

Santorini Farro Salad (like they make at Cheesecake Factory)
    http://blog.thenibble.com/2012/05/10/tip-of-the-day-try-farro-an-ancient-wheat/

It uses arugula, but mixed greens would probably be fine. And no I don't really measure the greens. :)

My favorite is a mesclun mix with roquefort crumbled into it, crushed toasted walnuts and fresh strawberries with a sherry vinaigrette and fresh sliced shallots.

I do like Francl27 salad, with goat cheese and smoked salmon always an awesome combo :)

Oh yeah....I correct myself...Caesar is my fav. I load that baby up with chicken, parm and croutons and dressing, etc...you get the idea. I need to be careful with them though b/c I will easily turn it into a 900 calorie gut buster.

I use a salad as a conveyor belt for fat. One of my faves is pepperoni, mozzarella, and ranch dressing. Also love caesar.

Baby spinach, goat cheese, tomatos and cucumbers. I don't need any dressing because the tomatos and goat cheese kind of mix together and get all melty all over the spinach. Yum. Sometimes I throw in some chicken.
  • Baby mixed greens with goat cheese, blueberries, strawberries, sliced almonds, cucumbers and a raspberry vinaigrette....yum!!

Baby spinach or mixed greens, chicken, almonds, strawberries, blueberries and some homemade balsamic dressing.

Close second: spinach/lettuce, hardboiled egg, feta, bell pepper cucumber and homemade apple cider vinegar dressing.

those lean cuisine salads seem like a huge waste of money. add your own lettuce.....why? can't you just put chicken on your own salads haha.

i usually just throw every vegetable in my fridge into a bowl with lettuce, feta or goat cheese, banana peppers, sometimes a protein like tuna/chicken/tofu/nuts and i make my own dressing with apple cider vinegar, dijon and honey

This is what I do too! Though I usually add a little bit of olive oil and balsamic vinagrette, I have this almost daily and never seem to get tired of it. :P
    Bumping for more ideas! :)

Whatever leafy greens are on sale - green apple, craisins, feta cheese, tomato, red pepper, walnuts or pumpkin seeds, two poached eggs. If you keep the yolks somewhat runny there is no need for salad dressing. But if you need it Marie's Super Blue Cheese. AND if I really have some calories leftover some Avacado.

I always love baby spinach, grape tomatoes, red onion, almond slivers, craisins (I put feta on my kids') and a greek or vinagrette dressing.

Lately I've been loving baby spinach, romaine, bell pepper, tomatoes, onions, black olives, green olives, red onion, cucumber, and pepperincini with sweet onion (basically a veggie delight salad from subway, but I make it at home, too). So stinkin' yummy!!!

    THIS SALAD!!

    http://www.sprinklewithflour.com/2013/05/fried-goat-cheese-beet-salad-nutmeg.html

But I bake the goat cheese rounds instead of frying them. OMG I could eat that all day every day.

Mt current favorite salad has no leafy greens at all: English or Persian cucumbers (no peeling needed), cherry tomatoes (the heritage ones at Costco are great because of all the different colors), sweet onions and 1.5 tablespoons of Riverhouse Greek Feta & Kalamata Olive dressing. A big and filling salad is only about 300 calories.

I love hamburger salad - iceburg lettuce, lots of tomatoes, shredded cheese, lean crumbled hamburger meat, cucumbers, carrots and lite thousand island. It is like eating a Big Mac, but tastes way better.

Salad 1: Mixed baby field greens with 1-2oz crumbled goat cheese, croutons (homemade with 1oz of a whole wheat baquette, cut into cubes, sprayed with olive oil spray, and toasted/roasted with whatever herbs I feel like throwing in), craisins or raisins, some fennel seeds, salt, pepper, and balsamic vinegar (the good kind). No need for oil if you have the good stuff!

Salad 2: Greek salad with romaine, 1-2oz feta, 2oz chopped kalamata olives, tomatoes, cukes, juice of half a lemon and a few shakes of red wine vinegar, salt and pepper. I often add a chicken breast that I douse in Penzy's Greek spice mix, then sautee.
