I've seen a few people ask for veggie burger recipes, so I want to share mine. For the past several years, I've attempted to sample every veggie burger I can, in as many places as I can. I've taken the characteristics that I like, and tried to work through several different recipes online to tweak as closely as I can to what I consider the perfect veggie burger. After more VBs than I care to count, it's dialed in. I even have a couple of meat-eaters in the family that regularly ask me to make these for them.

A good veggie burger does not seek to replicate a beef burger. It stands on its own merit as a flavor powerhouse. A good veggie burger is not simple. It involves several steps, ingredients, and some time. This veggie burger is vegan.

Veggie Burger Recipe:

Ingredients
- 1 16oz can of black beans, drained and rinsed
- 1/2 cup diced onion
- 2 cloves garlic, minced or crushed
- 1 cup frozen corn
- 2 cups diced portobella mushrooms
- 4 tbsp olive oil
- 3 tbsp fry sauce
- 1/2 tsp italian seasoning
- 1/2 tsp fennel
- 1/2 tsp chili powder
- 1/2 tsp cumin
- 1 tsp garlic powder
- 1 tsp onion powder
- 1/2 tsp adobo seasoning
- 1/2 tsp Ms. Dash garlic and herb
- 1/2 tsp salt
- 1 cup breadcrumbs
- 2 tbsp garlic margarine (2 tbsp margarine plus 1 tsp garlic powder)
- 1/2 cup brown rice
- 1 cup vegetable stock
- 3 tbsp ground flax seed
- 6 tbsp warm water
  • Make fry sauce (directions below) in advance, and let sit in fridge for at least an hour.
  • Cook rice in vegetable stock per instructions.
  • Preheat oven to 300.
  • Line a baking sheet with parchment paper and bake black beans in oven for 15 minutes to dry them out.
  • Mix ground flax with warm water and let sit for several minutes. Will firm up and become an egg-replacer.
  • Heat 2 tbsp oil in a pan over medium heat. Saute the onion, mushrooms, and garlic until softened, about 5 minutes.
  • Transfer sauteed veggies to a food processor and pulse with black beans, fry sauce, italian seasoning, fennel, chili powder, cumin, garlic powder, onion powder, adobo, Ms Dash, and salt until combined but still chunky.
  • Mix breadcrumbs with garlic margarine, and combine with mixture from food processor.
  • Add rice and corn to mixture
  • Add flax egg-replacer to mixture
  • Mix/stir well to combine
  • Cover and put mixture in fridge for a couple of hours to firm up (so your patties don't fall apart)
  • Form and flatten into patties.
  • Heat 2 tbsp oil over medium heat. Grill patties a few minutes per side until browned and cooked throughout.
  • Top veggie burgers with leftover fry sauce and your favorite vegan cheese

Fry Sauce Recipe:

Ingredients
-1/2 cup vegan mayo ("Just Mayo" brand works well)
-1/2 cup ketchup
-2 tablespoons dill pickles minced
-1 teaspoon yellow mustard
-Dash of fine sea salt
-1/2 teaspoon freshly ground black pepper
-1/2 teaspoons sugar
-1 teaspoon apple cider vinegar
  • Mix all fry sauce ingredients together in a blender or food processor.
