Meal prep vegan friendly

I’m going to start prepping breakfast lunch and dinner with my job I’m going to have to eat in the morning so I will prep up throughout the whole week and additionally I’m going to be prepping dinner for my friend but I can give her some things for lunch to looking for meal idea I have plenty something that you guys like? Comment below vegan friendly

    So how far in advance are you cooking?

    I think most rice and bean dishes have a decent refrigerator life. You'd just have to be careful what fresh veggies you add to them. Cucumbers stay good if they are pickled but not so much otherwise. My bean salad has fresh veggies. Onions, celery, and carrots stay good, but I wouldn't add red peppers unless I was going to eat it in the next day or so.

    For breakfast try overnight oats - it's so simple - add in oats (I add a quarter cup) with a tablespoon of chia seeds (I also add flaxseed) some frozen fruit and a cup of plant milk. Shake it up and leave overnight - it's delicious.

    For lunches if you are prepping them all on the weekend for the week make things like a bean chili or quinoa with beans and corn which will last the week.
