Hey everyone!
I am eating rice with my dinners at the moment and am looking for ways to jazz it up without adding tooooo many calories!
I have tried dried chili, powdered garlic and stock cubes

Cook it in vegetable stock or chicken broth. Add in liquid aminos to the water when cooking. Sprinkle in stevia and cinnamon to make a sweet rice. Cook the rice, place on a well sprayed piece of foil, lay a piece of seafood on top and then season and place in oven and allow the meat/ seafood juices to cook on top of the rice with the juice seasoning it.7

Coconut rice! Adding coconut canned milk to the rice while cooking gives it a subtle delicious flavor and creaminess.
I always cook a garlic clove in a little bit of olive oïl (onion goes well too), add fresh parsley/other spices and then the rice, give it a swirl and add the stock. The flavor is quite different from powdered garlic!
Cooking it with seafood stock (especially homemade) gives it a great flavor! Then you can add some green and red peppers, onion, grated tomato, paprika, saffron and cumin and at the end prawns/mussels/other seafood. So flavorful!1 -

I like to cook my rice in stock instead of water. I've also been known to cook it in Coconut Milk. It adds a few calories, but gives it delicious flavor and richness if you like the taste of Coconut. Tumeric Rice is another one of my favorites, just add 1/2 - 1 tsp of Tumeric to your cooking liquid per cup of rice. And sometimes, I just like plain white rice cooked in water with salt, pepper, and butter (actually ghee since I'm Lactose Intolerant).3

Just keep in mind that a cup of coconut milk has more than 500 calories. You'll turn that 175 calorie 1/4 cup serving into a 400+ calorie meal! Coconut rice is definitely delicious, but it's lower calorie to just add a tablespoon of butter to your rice.7 -
I like adding a couple spoonfuls of salsa when I make rice, both in the water before it cooks and as a mix-in after it's ready. I usually eat it with shredded/cubed chicken (also cooked with salsa) mixed in or with taco meat for burritos. Other times, I'll add soy sauce, veggies, and chicken for a stir-fry type meal.1

maybe to look to other grains with similar nutrition profiles to break up the monotony of rice (couscous; barley; farro etc)1

I make rice pudding with unsweetened vanilla almondilj and cinnamon. Maybe a touch of brown sugar.1

I use Sona Masoori rice (15 kg organic bag is available at Costco).
My daily rice is usually basic. Cooked in a bed of garlic with salt.
To change things up, i mix cilantro to the rice every now and then.
Other times, i add coconut milk or a little coconut oil.
And if you;re going fancy, a little olive oil, 3 garlic cloves... Fry until golden.
Add the rice, one bay leaf and 3 or 4 Star Anise + salt.
Cook normally.
Remove the Star Anise and the Bay leaf before serving.
It tastes great with any dish.1 -

1TBSP jalepeno oil per cup dried rice, 2 cups chicken stock instead of water, 3TBSP chives, pepper (to your liking - I usually add a lot)0

Roast a veggie, then puree it with some of the water you are cooking the rice in and use it like normal water- adds lovely colors and tastes0

Saute in tiny oil, veggies like carrot, onion, precooked potato and sweet potato cubes, peppers like pasilla or bell. Add a bunch of cooked rice, then a bit of canned chipotle pepper in adobo sauce or other zippy spice. Greens underneath, an egg on top... dinner.
Also, rice pudding for me too please! Look up chard and rice casserole online, it's yum. And can't wait to try the cilantro lime rice.0 -
I'm in China on business. They serve rice with everything. When I've used the canteen they think i forgot the rice. I just dont eat much of it. Gives me carb induced narcolepsy.0

It's amazing what subtle differences in flavor and texture can add to any rice dish. At any given time, we have basmati, jasmine, arborio, sushi, wild, and brown rices in our pantry0 -

I love onions, especially the sweet vadalias. I put an entire huge onion in my last batch of yellow rice and it really added a great flavor.0
