Does it matter if you eat more protien & carbs during the day but eat a lot of veggies at night?

For me, breakfast is usually higher protien-egg whites or almond butter & carbs-usually toast. At lunch I usually do a sandwich or wrap but include lettuce, tomatoes, & banana peppers with the sandwich. Supper is usually where I load up on my veggies with some protien & little to no carbs. But days like tomorrow, I’m going to do my normal high protien high carb breakfast, lunch will be cottage cheese, fruit, & some whole grain cereal but supper will be a big salad with lots of veggies. Does it matter, weight loss is my goal, that some days I don’t get veggies until my supper? Again, this isn’t an everyday thing; maybe once or twice a week.

No, unlikely to matter in any way, as long as you're not having an issues with satiation, or with what you eat (or don't eat) late in the day hurting sleep quality. Nutrient timing is relatively low in importance for those of us who aren't elite athletes, and has nothing to do with weight loss (other than satiation). There's a bit of research suggesting that people who are aging might be better off spreading protein through the day. You're getting micronutrients in the breakfast and lunch you mention, besides.1

I think that's just a matter of personal preference. Whatever works best for you.
Personally, I eat more protein and fewer carbs at breakfast (mostly just high fiber carbs early in the day) and that keeps me going without crashing for a long time. And at night, I eat most of my carbs. I usually exercise later in the day, and carbs after a vigorous workout taste like magic to me. I find that eating carbs before bed also helps me sleep for some reason - probably the same reason I don't eat them early in the day (I get sleepy and relaxed.)
I do daily exercise, a lot of endurance work and some strength. I pretty much like to get a good balance of protein throughout the day, fewer carbs early in the day, more carbs at night, and my fruits and vegetables just fall in wherever they find a place.0
