Does anyone have a low calorie crustless quiche recipe that actually tastes good?

    You mean a frittata?

I like to make lots of variations with the following ingredients
egg base: egg or actually I prefer using egg beaters
pick a couple of veggies: sweet potato (cooked) , broccoli (blanched), cauliflower (cooked), onions (sauted is best) but chopped finely raw is fine , garlic
pick a cheese: goat, feta, pecorino romano, or greek yogurt makes it nice and creamy
spices: I like to add rosemary to mine, ive tried smoked paprika and cumin, but I like rosemary the best
mix all together pop in oven

also good for using up other leftovers, i've tossed in spinach, ground turkey, barley, couscous

    ^This. So much.

I personally like frittatas with leeks, bacon and gruyere cheese. Chop the bacon and get nice and crispy in a pan, add chopped leeks until everything is nicely browned and fragrant. Set aside to cool a bit. When everything is lukewarm/room temperature, mix the leeks and bacon into the frittata mixture and pour into a well-buttered pan. Sprinkle grated gruyere cheese on the top so that it's lightly covered. Bake in the oven until just done, then broil to get that bubbly cheese perfection on top. Serve with a spring mix/arugula salad with a nice vinegary dressing and some sweet tomatoes. Great for lunch, dinner, or breakfast. Can reheat (gently!) in the oven, but don't use the microwave as it will ruin the texture of the eggs. Tastes fine at room temperature too.

I've made this recipe several times and love the potato substitution for crust
