Other than the ordinary - what to do with Refried beans

Was wondering if anyone had any recipes that use homemade refried beans. I had a serious craving for them and made a big batch in my instant pot. Now I have enough refried beans to last me 6 months!

Short of ordinary Mexican dishes (i.e., tacos, quesadillas, nachos, dips, etc.) does anyone have any somewhat healthy recipes that they have tried that use refried beans?

I have seen refried bean burger recipes or adding them to chilis but that's about it. I will probably freeze them in individual ziplocs, but before I do wanted to see if anyone had anything fun they do with them.

    Mexican manicotti or lasagna

I make it pretty similar to that but without meat- just the refried beans- and salsa instead of taco sauce.

I have not tried it but maybe you could use your refried beans instead of chickpeas to make a sort of falafel... or something like these bean balls. -> https://www.onegreenplanet.org/vegan-recipe/refried-beanballs-with-pasta-and-spinach/

Break the batch into smaller portions and freeze.

Sometimes for breakfast I'll crisp up a tortilla (hold it over the flame of the gas stove), put half a cup of refried beans on it, top with sauteed spinach and a fried egg.

What about blitzing some up with lemon and alliums for a hummous style dip to serve with crackers or crudites? I like the flavour combination of this cheesey bean dip:

I mix refried beans with taco seasoning and use it as a meat replacement. Mexican lasagna (aka enchilada casserole) is a good easy recipe. Just layer tortillas, refried beans, cheese, onions, and red enchilada sauce in a baking dish like a lasagna, top with black olives and then bake. You can find more detailed recipes on Pinterest.

I use them to make mexi pizzas all the time. I heat a skillet on the stovetop, spray with some Pam, spread refried beans on a tortilla and toss it into the pan. Add veggies and a little bit of cheese. Cover to melt the cheese and keep on the stovetop until the tortilla is crispy on the bottom. Remove and slice. Serve with salsa. So good!

You could make a hummus out of it. Add some tahini, cumin, garlic and chili powder. Pinto bean hummus.

Yes, indeed. It is all the fault of the Instant Pot......happens to me too. I've been nibbling along on the pound of beans I made and pureed. I'll end up freezing portions in sandwich bags. That's ok I guess. Man, they are good. Made them without a pork hock, just some spices and they are better than most restaurants.
