    I use cottage cheese as that's easier to find than ricotta. Round gyoza wrappers instead of square wonton wrappers give a neater look. I get them in the deep freeze section of the asian grocer.

    For anyone to help you, you would need to specify your definition of a healthy recipe, and what kind of picky those eaters are. And then you won't need any outside help :)

    Hint: A healthy diet is balanced and varied. Many meals don't need a recipe, beyond a basic idea of what constitutes a balanced and appealing meal. Eating family meals togheter is associated with many good things. Childen and adults can eat the same foods. Special kids' meals produce picky eaters. People, including kids, eat what they are served when that's the only option. Some foods need repeated exposure to get used to. The adults of the family decide what gets on the table; each eater decides how much and whether to eat.

    Chipotle Chicken Stir Fry

    • 21 oz, Chicken Breast Grilled
    • 1 Large Whole Orange Pepper
    • 1 Tbsp, Organic Extra virgin olive oil
    • 1 cup chopped mushrooms
    • 1 medium zucchini
    • 2 tbsp chipotle seasoning
    • 1.33 cup dry, Royal Rice Blend

    Breakfast Casserole ( For upside down night. IE breakfast for dinner )

    • 16 oz, Ground lean turkey sausage
    • 12 large, Eggs
    • 1 yellow or white onion
    • 1 large tomatoes or about 20 Cherry Tomatoes
    • 2 tsp, Spices, pepper, red or cayenne
    • 2 Garlic cloves

    Brown sausage in pan. Spray non-stick olive oil in casserole dish. Add all ingredients into dish and bake at 275 until golden brown.

    Banana pancakes

    • 1 medium banana
    • 2 large eggs
    • 1/2 tsp cinnamon and sugar mix

    Mix with a fork and leave it kind of chunky for best results. If the mix is really runny it wont cook right. Spray pan with olive oil and cook on low to medium heat.

    Black bean quesadillas (use flat outs)
    Wrap pizzas (use flat outs)
    Make meatsauce out of turkey and marinara, serve with spaghetti squash or spaghetti (I eat one, kids eat the other)
    Tacos with lots of vegetables (I often skip the taco and just eat the insides)
    Zucchini pizza (use sliced, cooked zucchini as the base)
    Korean beef bowls (serve with rice for them, sauteed cabbage and carrots for me -- but they eat those too, surprisingly)

    All recipes are "kid friendly" :smile:

    Mine don't care for really spicy foods, so I only make those for myself.
