What kind of vegetarian though? Some eat eggs and drink milk. Others don't. :)

I had these for lunch yesterday and they were good:

I had them with sour cream and it didn't even cross my mind that they were vegetarian. Nothing convoluted and no weird ingredients.

Veggie Lasagna, bean chili, eggplant Parmesan, bean burritos, red beans and rice, stir fry with veggies and tofu. Also look at ethnic foods such as Indian from cultures with a large number of vegetarians, they will have a bunch of recipes. Aloo gobi (cauliflower and potato curry) is a favorite of mine.

If you like it, things like vegetarian indian food is a great choice since a lot of choices are designed to be meat-free, instead of just a meat containing recipe with the meat removed. I'm also a big fan of hotforfood's youtube channel, but that's fully vegan, so it might not be your thing (it's also not aiming to be low calorie or anything -- just tasty).

Stir fry with diced mushrooms and green/red pepper, onions, garlic. Put it in a whole wheat wrap and enjoy. I’m not even a vegetarian so I just made that up but it sounds like it would be good,no? I’d eat it. Lol

and sesame noodles. Add more crunchy raw vegetables such as bean sprouts, chopped green onions, julienned carrots to make this a balanced meal.

You can use any barbeque sauce (or make your own) and broil tofu with the sauce and put it on a whole grain bun to make vegetarian barbeque
