Chia pudding

I know I'm years behind everyone else but I just tried chia pudding. It was delicious! And my kids love it! We've made it a few different ways but so far our favorite (and super basic) recipe is below.

1 cup unsweetened almond milk
1 tablespoons chia seeds
1/4 cup frozen blueberries
1/4 cup fozen strawberries
1 teaspoon vanilla extract
* optional - 1/2 a tablespoon of stevia

I mix this up in a cup, pop it in the fridge for a few hours, or overnight, at it's great. Sometimes I thin it down with a little more water or milk to make it more like a chunky smoothie.

What are some of your favorite combinations for chia puddings? Or, what else do you use chia seeds for? I'm really loving them right now.

    Hi!

    I have tried them in a pudding before but I didn't like the texture. I currently put them in my shakes but only about 15-20 mins prior to consuming it or otherwise it becomes a jelly like consistency. I did just make a pudding though using an avocado and it was wonderful! Considering that I don't even like avocados at all... and I mean at all! :)
