Have you looked into using them in stir-fry or quiche? Scrambled with spinach is one of my favs or in an egg white breakfast sammy. I think you can pretty much use them in place of eggs in basically anything!2

I add them to soups for extra bulk. Or even cooked cereal - oatmeal, grits, quinoa.1

Sweet egg white “pancake/ frittata “
Cooked low and slow in a pan covered with foil or baked.
Mix egg whites, sugar free syrup, stevia, cinnamon, vanilla extract, add in your choice of fruits and let cook fully through and it becomes a delicious protein style sweet frittata and the fruit gets all gooey and delicious! Top with more sprinkles stevia and cinnamon. You can adjust the base recipe to your liking, this is just a general guideline to how I’ll do it4 -

I make egg white muffins all the time. I like mini muffins because they are almost bit sized (two bites). Grease muffin pan, add veggies, meats, and cheese of your choice and fill with egg whites. Mini muffins with a little cheese and mushrooms are great. Bake at 400 for 15-20 min. They will brown on top. I cook mine a little longer to give them some texture and crust with the cheese.0

Some great ideas, esp the pancakes and sugar free macaroons! I may try and adapt the muffins and frittata as well0

Dutch bitterkoekjes are almond macaroons. Struggling to find good recipes in english. I would use half the sugar in the first recipe and also make the dough less thick so you can pipe the cookies into little nipple like drops. You can grind flaked or whole almonds yourself in a food processor. The second video is in dutch, but watching it gives an idea how quick and easy this is.

I use small quantities of egg white frequently because I like to coat cubes of meat in it, then dredge in potato starch or corn starch to give a crunchy coating to the meat in stir fry recipes. When I buy a carton of egg whites, I freeze in ice cube trays and just keep a ziplock bag of the egg white cubes handy. One small ice cube is about a single egg white.2 -
The second dutch recipe is the one I use. For two egg whites, use 150g almonds and 150g icing sugar and a teaspoon of bitter almond extract. Blitz together in a food processor. Fill a piping bag and pipe large nipples onto a baking paper lined cookie sheet. Bake 10 minutes at 190C. Whole recipe takes 15 minutes.1
