Lasagna cupcakes is a dish that kids love to make and eat.

I do a couple of adaptions. Round gyoza wrappers (frozen section of asian supermarket) look neater than square wonton wrappers. I substitute cottage cheese, which is easier to find than ricotta. I normally thinly slice a mozzrella ball or omit it altogether. To keep it simple my layering technique when cooking with kids is gyoza wrapper, a tablespoon of commercial tomato sauce, a teaspoon of cooked ground beef, a teaspoon of cottage cheese. Two or three layers depending on how big your muffin tins are. Sprinkle the finished product with grated chedddar before baking.

For easy unmolding you can use silicon muffin tins. If you are the type of family who fights for the crunchy corner pieces of a normal lasagna, use a metal muffin tin, which you will need to oil first. That way every muffin becomes a crunchy corner piece.

    Serve with a green salad.
