Cauliflower and blue cheese soup
Or protein pancakes - I whizz the mixture up in the blender. I include zucchini or pumpkin to bump up my vegie intake0 -

I roast Cauliflower, leek/onion and garlic (sometimes broccoli and/or zucchini too) . Blend roasted bits with chicken stock and a bit of blue cheese. Heat it up.2 -

Banana, vanilla soy milk, two handfuls of spinach, 1 tablespoon peanut butter, 1 tablespoon cocoa powder, and a little sweetener if needed. Makes delicious chocolate peanut butter banana flavored shake.
Second favorite is this: Michael Chiarello's Roasted Tomato Soup
He is pretty liberal with the oil. When I make it I just use a tablepoon for the roasting and another tablespoon for sauteeing the veggies and it still tastes delicious.0 -

When I make this I like to add some heat (commercial red curry paste), which sometimes needs a little sugar to balance it. I would also add fish sauce to this recipe (soy if you are vegan). Thai food should be a pleasant balance of sour, sweet, spicey, salty.

I like this too. The custard isn't crucial if you can't afford the calories.
