Calculate carbs in new flour product

My spouse read an article in the newspaper about a young woman in New York who has found a way to use the waste product of beer. She discovered she could use the barley, that would otherwise go to a landfill, to make a low carb flour. If we are to make our own bread with this product, would I count the carbs as normal? I would contact the manufacturer and request the Nutrition Information.0

The nutritional information for the flour is shown on the Etsy shop - click through the images and it shows you the values for a 1oz serving, which is 20g of carbs for both the light and dark flours.0
