Hi Everyone!
I'm looking for some lunch ideas - the last few weeks I've been eating different noodle pots (mostly Naked Noodles) but am getting a little bored of them. I previously used to have homemade hummus in wholemeal pitta breads but I'm looking for healthy ideas for lunches that are easy and quick to make and take to work. Would really appreciated your suggestions!!!!

What about Buddha bowls? They usually are pretty adaptable and easily changed up. I have made them for my husband using leftovers vegetables. Lots of options here.

Mason jar options
I save plastic snack cups used to hold mandarin orange slices for this reason. They fit on the tops of the wide mouth lids. Take the mason lid to cover the top of the snack cup, fit a ring and it all fits together when you screw the lid to the jar.

Salads: Fill jar with salad and the snack cup with dressing . Pinterest has a LOT of options for this. Like Taco salad. Layer the mason jar with salsa, lettuce, tomatos , black beans, corn, meat and then store chip strips in the snack cup.
Fill the jar with tuna salad and place Ritz crackers in the snack cup.
You can use this too for snacks.
Fill the jar with celery and fill the plastic snack cup with peanut butter .
Fill the jar with yogurt and fill the plastic snack cup with granola toppings or other toppings.
Wraps are another option. I just found a really tasty , low carb tortilla wrap that is only 70 calories. I fill that with romaine lettuce, grilled chicken breast ( already prepared ), and some Ranch cucumber dressing.
Vegetable and cheese muffins. Unconventional but they freeze well and also make a good breakfast.

I just made a big pot of veggie soup in my instant pot and now I have enough for the rest of the week. Right now I'm having veggie soup and toast.0
