Plan out your meals the day before and execute it. Don't let hours and hours pass by without eating or you'll find yourself trying to play catch-up in the evening. What helps me is having a meal within an hour after waking up and then an earlier lunch around 10-11am. It leaves me a lot of time to fill out the rest of my calories.

Try logging your food the day before so that you have a plan. If you cannot eat food during the day, eat at night. If you do not have time to cook, buy foods prepared like grocery store rotisserie chicken, cold cuts, fruit, bread or plan wraps to fix with tuna or whatever you like. Cook a small hamburger or pork chop. Experiment with crockpot cooking: chili, soup, cuts of beef. If you are short on calories eat dried fruit or granola.

When to eat, is up to you. You just have to stick to your total calories for the day. If you prefer to eat the biggest meal at night, you can do that. If you want to eat more during the day, do that. You may have to plan for it.

Is your goal weightloss? Then you can be sure that "not eating enough" is not a real issue. If you find yourself not hitting your calorie goal, you are either so excited about your new diet and eager to lose weight, that you don't recognize hunger for hunger, or eating boring foods that take away your appetite or fill you up before you have had enough calories, or logging incorrectly. Decide if there is a problem, and if so, figure out what the problem is, then pick a strategy to fix the problem, perferably one that doesn't create a new, bigger problem.
