Skillet Peach Pie

Something I just kind of threw together this morning since after eating one oversized, rock hard and tasteless peach yesterday I didn't feel like repeating the experience with the second one I'd bought.

This was delicious and came out to about 250 calories total (rough estimate only since I didn't weigh anything, but I'll do that properly as soon as I can get more peaches.)

1 large peach
1 extremely oversized hard, tasteless peach
pat of butter
dash of salt
1 tbs brown sugar (Level tablespoon, I didn't pack mine but didn't weigh it either, this is the
1 tbs chopped pecans
4 crushed vanilla wafers
cinnamon to taste

Just soften the peach in a pan with the butter over medium heat, then turn it to low and add everything else and stir it around a bit. Cooking the otherwise bad and boring peach REALLY intensifies the flavor.

I didn't have either but I imagine this would be great with a scoop of yogurt for breakfast, or vanilla ice cream for dessert.

    Thanks for this. Some other ideas for disappointing fruit.

    Sprinkle with sugar and then caramelize it with a blow torch.
    Poach in a combination of wine and sugar to make a compote.

    That sounds good. I'd do it with a granny smith apple just because I can't eat them raw, too sour.
